Peanut Butter Cookies

Day #4 of my official maternity leave... no baby yet & the forecast today is Snow, Snow, Snow! Needless to say, I've become quite bored. I decided that it wouldn't hurt to make another batch of cookies & keep them in the freezer. Chris loves all things peanut butter, so he will be happy to find a few of these on the counter when he arrives home from work!

Peanut Butter Cookies
3 cups Flour
1 tsp. Baking Powder
½ tsp. Salt
2 sticks Butter, softened
1 cup Peanut Butter, creamy or chunky
2 tsp. Vanilla
1 cup Sugar
1 cup Brown Sugar
2 Eggs

  • In a bowl, combine flour, baking powder & salt. Set aside this 'dry mixture.'

  • In a separate bowl, cream together butter, vanilla & peanut butter. Add sugars & beat.

  • Add ½ of the dry ingredient mixture & beat. Add eggs one at a time & beat. Add remaining dry ingredients & beat.

  • Roll heaping tablespoons of dough into balls & widely space on cookie sheet. Press each cookie with fork in a criss-cross pattern.

  • Bake @ 350 for 14-16 minutes until dry on top & golden brown. Cool 5 minutes on cookie sheet then remove.
