"Pita Pizza"

One of our favorite things to make for a QUICK (and cheap) dinner, or for lunch on the weekends, is homemade Pizza. My "secret" ingredient...

They were a great find at our local grocery store... 6 pitas for $1.09! I cook them on a pre-heated pizza stone @ 400 degrees for about 15 minutes. I also like that they make for a light meal & they remind me of those pricey appetizer pizzas you find at restaurants!

Since time is limited on the weekdays, I like to cut up a bunch of veggies on Sunday night to use for a pizza or two during the week (we use the rest of the veggies in salads). You can make the pizza with regular pizza sauce, or with Pesto sauce. I think the pesto sauce is more flavorful, especially when combined with the pita bread. The olive oil from the pesto sauce oozes onto the "crust," making it nice & crispy. (Pesto Recipe)

Topping Ideas:
Peppers, Onion, Mushrooms, Olives, Yellow Squash, Shredded Chicken, Sausage, Pepperoni, Sliced Tomatoes, Halved cherry/grape Tomatoes, Spinach, fresh Basil, sprinkle of oregano, etc.

*Also try experimenting with different cheeses... mozzarella, fresh mozzarella, goat cheese, Gorgonzola cheese, feta, etc.
