Meatballs

One night this past week I surprised Chris with a "good" dinner... spaghetti & meatballs! I love my Dad's recipe for meatballs, but this is another version I like to make when I don't have as much time. I found this recipe at few years ago in a Whole Foods flyer & have made these several times. They are simple, but delicious! I like to make the whole recipe so that we have leftovers for our lunches the next day or have some to keep in the freezer.

*Time Saver: Since I was making these on a weeknight, I chopped up the onion the night before to save myself some time!

Meatballs
½ cup Bread Crumbs
½ lb Ground Pork
1 lb Ground Beef
1/3 cup chopped fresh Parsley
1 Egg, lightly beaten
1 Yellow Onion, finely chopped
1 T. Oregano
Salt & Black Pepper
Approximately ¼ cup Olive or Canola Oil for frying
1 jar of Pasta Sauce (I use 1.5 jars)

-In a large bowl, combine bread crumbs, pork, beef, parsley, egg, onion, oregano, salt, & pepper. Mix briefly with your hands. Form the mixture into 2’’ balls.

-Heat oil in a large skillet (that has a lid for later) over medium-high heat until hot, but not smoking. Add the meatballs; cook until browned, about 4 minutes. Transfer to a paper towel to drain. Discard oil from the pan.

-Add sauce to the pan & bring to a simmer over medium-high heat. Add the meatballs, reduce heat to medium-low, cover & simmer until cooked through, about 20-25 minutes.

*Serve over Spaghetti (I use 100% Whole Wheat pasta when I cook for Chris & I)

*Quick Garlic Bread: Spread melted butter onto a piece of french bread. Warm in heated over (I had my oven at 350). Once warmed & slightly toasted, remove bread from oven & rub a peeled & sliced piece of fresh garlic onto the bread. Instant, FRESH, Garlic Bread!
