Last night we got together with my family to celebrate my Dad's birthday. We had a little Italian feast, including Lasagna & Meatballs. Here is my Dad's recipe for Meatballs. I may be a bit biased, but I think these are the best :)
Meatballs
*Makes 24-48 meatballs depending on how big you make them*
3 lbs ground beef (Ground Chuck)
1 lb ground pork
2 eggs
1 large onion (coarsely chopped)
~5 cloves garlic (chopped)
~4 T. oregano
~1 T. salt
~2 tsp. pepper
~½ cup grated Parmesan Cheese
~3 T. chopped parsley (fresh or dry)
6 slices (wet) slices of white bread with crusts
~1 cup bread crumbs
-Chop onion & garlic
-Mix ground beef & ground pork in large bowl. Add chopped onion & garlic. Add salt, pepper, oregano, & grated Parmesan cheese.
-Break eggs & add to mixture. Add bread crumbs. Add slices of bread (I usually run them under water in the sink to get them wet first).
-Continue to mix all ingredients until everything is mixed well. Then roll into balls the size of your liking.
-Spray a baking sheet with non-stick spray
-Add meatballs to tray (I rotate two trays, with about 24 meatballs per tray)
-Bake in oven @ 350 for about 30 minutes (I usually turn once during the process)
-Remove from oven & to container to put in fridge, freezer, or use immediately
*I usually cut & eat one or two to make sure they’re cooked enough & then put them in the fridge/freezer for later use
