Hot Ham & Cheese Sandwiches

Ben's Baptism is about a month away so I've been starting to think of what appetizers to serve at our house afterwards. The 'Appetizer' section in my Cookbook was so small, so I've been searching for some new appetizer recipes to include in my next Cookbook. I made a small batch of these sandwiches for dinner tonight to test them out... and they were SO yummy!

*May 2010: I updated this posting with a picture of the sandwiches from the party. They were a BIG hit :)

Hot Ham & Cheese Sandwiches
2 pkgs. of Hawaiian Sweet Rolls (Makes little 'Appetizer' servings)
1-2 lbs Ham, thinly sliced or shaved (I used Krakus Polish Ham from the Deli)
1/2-1 lb Swiss Cheese
2 sticks Butter, softened
1/4 cup Mustard
1/2 cup Onions, chopped
2 T. Poppy Seeds

In a bowl, combine butter, mustard, onion, & poppy seeds. Spread generously on the inside of the Hawaiian Sweet Rolls. Add ham & cheese to rolls. Place on cookie sheet & if desired, brush tops of rolls with a little bit of the leftover mixture (melted in microwave). Cover rolls with one large piece of foil.

Bake @ 350 for 20 minutes.
