Now that Ben has arrived I obviously have not been baking or cooking much; however, my parents brought over an "Italian dinner" for us the other night. Here is the lasagna recipe. I included it in my cookbook because I love that it uses no-boil noodles. It saves a lot of time not having to cook the noodles, and it is one less pot to wash!
Lasagna
1 package of oven ready lasagna noodles (no boil noodles)
24oz. jar pasta sauce
1 lb ground beef
1 cup water
1 lb ricotta cheese
1 egg, beaten
8 oz. mozzarella cheese, grated
¾ cup Parmesan cheese, grated
1 T. parsley flakes
Dash of nutmeg
Salt & pepper to taste
-Preheat oven to 375. In a saucepan brown ground beef. Drain fat, add pasta sauce, & 1 cup of water; bring to a boil. In a large bowl, mix together ricotta cheese, beaten egg, mozzarella cheese, ¼ cup Parmesan cheese, parsley flakes, & nutmeg. Add salt & pepper if desired.
-To Assemble: Spread a layer of hot pasta sauce mixture in bottom of 13x9x2 pan. Layer lasagna, ½ cheese mixture, 1/3 sauce mixture, lasagna, remaining cheese mixture, 1/3 sauce mixture, lasagna, & remaining sauce mixture. Top with Parmesan cheese.
-Bake @ 375 covered with aluminum foil for 40 minutes. Remove foil & bake for 15 minutes more. **Let stand 5-10 minutes before cutting**
