Chocolate Lovers
As I try to keep myself busy waiting for the baby I have been making lots & lots of cookies. My freezer will be well-stocked with a variety of cookies for anyone who comes to see our little one... if he/she ever decides to arrive! :)
LOVE chocolate? Then these cookies are for you! They are so simple to make, but have a "gourmet" taste to them. Remember to use a cookie scoop to get perfectly round cookies!
LOTS of Chocolate Chip Cookies (It’s a double recipe)
4 sticks butter, @ room temperature
1½ cups sugar
1½ cups brown sugar
2 T. vanilla extract (Yes, Tablespoons)
4 large eggs, @ room temperature
4½ cups all-purpose flour
1 cups whole rolled oats (not quick)
2 tsp. baking soda
2 tsp. salt
1 bag Ghirardelli 60% cocoa chips
1½ bags Nestle Tollhouse mini chocolate chips
-Cream together: Butter, Sugar, & Brown Sugar
-Add: Vanilla & Eggs (one egg at a time)
-In separate bowl mix: Flour, Oats, Baking Soda, & Salt
-Gradually add dry mix to the wet ingredients.
-Add all the Chocolate Chips & mix with a big spoon.
-Bake @ 375 until slightly browned around edges – usually about 12 minutes or so depending on your oven. Cool on a rack.
