Chicken Taco Pizza
1 "Pita Pizza" bread
Green Salsa (we LOVE this one...Arriba! Fire Roasted Mexican Green Salsa) *I used Medium
Mozzarella cheese, shredded
Black beans, rinsed & drained
Frozen yellow corn, thawed
Cooked chicken breast; cut into small cubes
Chopped cilantro
-Preheat oven to 425°F. Arrange pita on a pizza stone or large baking sheet. Spread salsa (not too much or it will make the pita soggy) over pita & sprinkle with some mozzarella cheese. Top with beans, corn, chicken & more mozzarella cheese.
-Bake until pita is crisp & cheese is bubbly, about 15 to 20 minutes. Sprinkle with cilantro, & cut into 8 slices.
*For a vegetarian version, simply substitute sauteed zucchini or bell peppers & red onion for the chicken.
