Dad's Chili

We are having our neighbors over for dinner tonight & I thought I would make my Dad's Chili. It's a great, hearty meal to have on a chilly day. Serve it with a bunch of toppings on the side & some corn muffins! (See below for suggestions)

Dad’s Chili
5 lbs ground beef
5 cloves garlic, chopped
1 large (or 2 medium) yellow onions, chopped
5 T. chili powder
2 T. ground cumin
2 - 28oz. cans of whole peeled tomatoes
2 - 15oz. cans of tomato sauce
Salt to taste

*Optional: substitute 2 - 15oz. cans of red kidney beans for 1 lb. of the ground beef (I like to add the beans during the last hour of cooking).

-Heat a little olive oil in a deep chili pot. Add meat & brown it; drain fat. Add the spices, onion, & garlic. Then add the rest & cook on low for about 4 hours (covered). Stirring occasionally & breaking up whole tomatoes.

*Suggested Toppings: shredded cheddar cheese, cooked elbow macaroni noodles, oyster crackers, sour cream, & kidney beans.

*Serve with corn bread/muffins on the side.
