My friend Jaime passed this recipe along to me! I made it tonight for dinner & it turned out GREAT! Chris loved it :) Thanks, Jaime!
White Chicken Enchiladas
4 ounces cream cheese, softened
1/2 cup sour cream
1/2 cup green salsa (found in the Mexican food section) *See Notes Below
1 1/2 cups cooked, shredded chicken *See Step 1 Below
1 cup shredded Mexican-style cheese blend + extra for sprinkling on top
1 1/2 cups white cheese sauce or queso dip *See Notes Below
6-8 (8 inch) flour tortillas
1. Preparing the Chicken: (This step can be done in advance)
In a large ziplock bag, marinate 2-3 chicken breasts in Lawry's Mexican Chile & Lime Marinade with Lime Juice for at least a half hour (or longer). Afterwards, bake the chicken in a dish covered with foil for 30 minutes @ 400 degrees. Let slightly cool, then shred chicken using 2 forks until you get 1 1/2 cups of meat.
2. Preheat oven to 375. Lightly spray a glass baking dish with cooking spray.
3. In a bowl, stir together the softened cream cheese, sour cream & green salsa until blended. Fold in the shredded chicken & shredded cheese.
4. Spread a small amount of the white cheese sauce/queso dip onto the bottom of the baking dish. Evenly divide the filling among the tortillas & roll into firm cylinders. Place into prepared baking dish & cover with remaining white sauce (*If making these in advance, wait to pour the white sauce until you are about to bake the dish).
4. Sprinkle with additional shredded cheese on top. Bake in preheated oven until golden & bubbly, about 35 minutes. Let cool for a few minutes before serving.
*Ideas for Sides/Toppings: Spanish rice, refried beans, black beans, extra green salsa, salsa, sour cream, shredded lettuce, chopped tomatoes, & sliced olives.
*Notes:
-White cheese sauce/queso dip can be found in a can in the chip aisle. I used Walmart's Great Value brand 'White Salsa Con Queso' dip.
-I used Arriba! Fire Roasted Mexican Green Salsa (Mild) & it was REALLY good. We put some extra on the top for serving. (I found it at Walmart)
