Cream Cheese Frosting
8 oz. Cream Cheese
1 stick Butter
1 lb box Powdered Sugar
1 tsp. Vanilla
*Cream together & spread on cooled cake
Last week my Mom bought me some new stuff from the Wilton Tent Sale & I've been looking forward to trying everything out! I decided to make a "Hawks" cake for Chris to take to work tomorrow to celebrate the Stanley Cup win. While I used a boxed chocolate cake mix, I made the frosting from scratch. This cream cheese frosting is SO good! For my birthday, Anita has surprised me with banana cake at work, topped with this yummy frosting. I simply put the ingredients into my KitchenAid mixer bowl & let it do all the work :)
To prepare I used my new 9in round cake pans (I used 2 pans). Tip: Spray pans with Pam, place a circle of parchment paper in bottom of each pan, & lightly spray with Pam again. After baking, I used a cake leveler to flatten/smooth the tops of both cakes. Frost the top of one cake, place the other on top, & then frost the entire thing. To decorate I placed chocolate chips around the base & dyed some of the frosting red & black... piping it through a plastic baggie, with a decorating tip... to make red dots & write 'Hawks.'
I also love my new cake/cupcake carrying case... thanks for picking out this & the other goodies for me, Mom :)

*This frosting is also really good when used on Banana Cake.
