My friend Jaime (who also started a cooking blog.... check it out for some great recipes! ::Jaime's Dishes::) passed this recipe along to me back when Ben was first born. I finally got around to trying it this past week... and it was delicious! Makes for great leftovers, too!
Chicken Pesto Pasta
3 or 4 cooked chicken breasts cut up (shredded or diced into chunks)
1 lb. farfalle (bow tie) pasta
6oz container of pesto sauce... I used homemade :)
1 jar of artichoke hearts (I used marinated)
Chopped tomatoes
Parmesan cheese
-Cook pasta & drain.
-Add cooked chicken & pesto sauce. Toss until well coated.
-Lay artichokes on top. Sprinkle with tomatoes & Parmesan cheese.
*I happened to only have 2 chicken breasts in the freezer... and the recipe still turned out great! You could also use the leftover meat from a rotisserie chicken.
