Today was my parents' 1st Grandparents Day :) So I wanted to have them, my sisters, & my Grandma Lou over for dinner. I made one of my favorite meals... chicken pot pie! I decided to get fancy & make individual ones, with homemade pastry. I even used my leaf cookie-cutter to put a "Fall Leaf" on each one :)

These individual dishes made for very generous portions (the recipe filled 8 individual dishes), so I simply served a crusty loaf of bread & some fruit on the side. I really think the individual dishes were worth the effort. It made for a great presentation, & I was able to easily make 2 of them vegetarian for my sisters.
This was the 1st time I made my own pastry... I was surprised how easy it was. Here's the recipe:
Homemade Pastry
3 cups all-purpose flour
1½ tsp. kosher salt
1 tsp. baking powder
½ cup vegetable shortening
¼ lb. cold unsalted butter, diced
½ to 2/3 cup ice water
1 egg beaten with 1 T. water, for egg wash
Flaked sea salt & cracked black pepper
Mix the flour, salt, & baking powder in the bowl of a food processor fitted with a metal blade. Add the shortening & butter & mix quickly with your fingers until each piece is coated with flour. Pulse 10 times, or until the fat is the size of peas. With the motor running, add the ice water; process only enough to moisten the dough & have it just come together. Dump the dough out onto a floured surface & knead quickly into a ball. Wrap the dough in plastic & allow it to rest in the refrigerator for at least 30 minutes. To use, roll out on floured surface.
