Mom's Cheesecake

My family came over for dinner tonight & my Mom brought her "famous" Cheesecake... aka the BEST cheesecake ever! I've made it a few times for company or to bring to friends' houses & it is always a crowd pleaser. Try to save yourself a piece for breakfast the next day... that's our favorite time to eat it :)

Mom's Cheesecake
Preheat oven to 375

2 cups Graham Cracker crumbles
½ cup Sugar
½ cup Butter (1 stick), melted

1. Mix Graham Cracker crumbles with Sugar & Melted Butter.
2. Press into bottom & up side a little of a 9’’ spring form pan to form a crust.

2 - 8 oz. packages of Philadelphia Cream Cheese (*Other brands don’t work well)
2 Eggs
2/3 cup Sugar
1 tsp. Vanilla
1 tsp. Lemon Juice

1. Cream the packages of Cream Cheese until softened & smooth
2. Blend in the Eggs, Sugar, Vanilla, & Lemon Juice
3. Pour into Crust
4. Bake @ 375 for 20 minutes
5. Remove from oven & let stand for 15 minutes

1 cup Sour Cream (8 oz.)
2 T. Sugar
1 tsp. Vanilla

1. Set oven to 425
2. Combine the Sour Cream, Sugar, & Vanilla
3. Spread over the baked filling
4. Return to a very hot oven (425) & bake for 10 minutes (or more if needed)
