One of my favorite things these days is Basil. This past summer I kept a Basil plant on our front porch & it was one of this easiest things to grow (I am usually terrible at keeping any sort of plant or flower alive!). We made tons of yummy Pesto from a little pot of Basil... it grows like a weed! The cold weather was the end of it though.
Recently, for my birthday, my friend Anita gave me a pretty basil plant... to keep indoors :) She also gave me this recipe, so I decided to give it a try for dinner tonight. I made BLTs & used Basil Aioli as a spread on the toasted bread. It was so good! Chris loved it, too. We're also going to use it on our turkey sandwiches for lunch tomorrow :)
Basil Aioli
*Feel free to adjust the ingredients to your liking
1 cup Mayonnaise
3 cloves of Garlic, pressed or finely chopped
1 Tablespoon (or a little more) freshly-squeezed lemon juice
24 Basil Leaves, chopped OR 1 Tablespoon dried Basil
Salt, to taste (I like to use coarse kosher salt)
Ground black Pepper, to taste
Mix all ingredients together in a small bowl.
Serving suggestions: Use as a sandwich spread (great with a turkey sandwich), use as a sandwich spread for BLTs, or as a veggie dip!
